Peanut Sauce Stir Fry (Vegan or Paleo)


Instructions for Simple Veggie Peanut Stir Fry



1 bag of fresh veggie stir fry mix (Could purchase organic or conventional)
1/4 of an onion chopped

Add 1 tablespoon coconut oil to the pan and fry up the onion. Then, add in veggies, allow to circulate in the pan for a moment. Add about 1 cup of water. Place a lid on the pan.


Sauce Recipe- 
1/2 cup coconut milk
1 tablespoon peanut butter
2 tablespoons of liquid aminos (soy sauce alternative)
1 tsp grated fresh ginger
2 tablespoons rice vinegar
Garlic and cayenne pepper to taste
Whisk this all together till smooth.
When veggies are almost cooked stir it all together.  You could add any cooked meat you have at this point and it would become more of a paleo meal.
It's ready to devour, savor and enjoy!
